Preheat the oven to 180°C (350°F). Wash the sweet potato thoroughly, scrubbing off any dirt. Place it on a lined baking tray and roast for 30–45 minutes, or until tender. Leave the skin on while roasting, it peels off easily once cooked and keeps the inside moist.
