In a large bowl, mix together the oat flour, yogurt, egg (or flax egg), sweetener, gingerbread spice (if using), and baking powder until a smooth batter forms. If the mixture seems too thick, add a splash of milk or water to loosen it up. Tip: you can make your own oat flour by simply blending oats in a food processor or blender until they become a powder.
