Turn cooking mode on

Guacamole:

1.

In a small bowl, mash the avocado with a fork.

Add chopped red onion, olive oil, lime juice, and any herbs/spices you enjoy.

Sweet Corn ‘Salsa’:

1.

Drain and rinse the sweetcorn. Then, in a pan with a little olive oil, sauté the sweet corn and chopped red onion until slightly golden brown.

Cook on medium heat for 5–7 minutes, until the corn is golden and slightly caramelized.

3.

Add all your favorite spices and a squeeze of lime juice.

Honey Chicken:

1.

Cut the chicken into bite-sized pieces.

Cut the chicken into bite-sized pieces. Then, add a drizzle of oil to a pan along with the chicken, honey/agave, lime juice, and spices.

Fry on medium heat for about 5–7 minutes until golden and cooked through, stirring frequently.

Yogurt Sauce & Assembling the tacos:

Mix all the ingredients for the sauce together in a small bowl. Taste test and adjust the seasoning to your liking.

Wash and dry the romaine lettuce leaves. Fill each leaf like a taco with a layer of guacamole, a spoonful of corn salsa, and 1–2 pieces of chicken. Drizzle the yogurt sauce over the top.

Arrange on a large plate and serve immediately as a fresh and satisfying lunch or dinner.
