Fresh Arugula Side Salad with Avocado, Berries & Feta

A vibrant, nutrient-packed salad that's as beautiful as it is delicious. This is the perfect accompaniment to any main dish – like grilled salmon, roasted chicken, or even a hearty soup. A slice of toasted seed bread (maybe with a fried egg for some extra protein ;) on the side makes it satisfying enough to enjoy as a light lunch on its own. Simple, fresh, and so nourishing.

Step 1

Place the arugula in a large bowl or colander and rinse thoroughly under cold water (arugula can be sandy or gritty). Spin dry in a salad spinner or gently pat dry with a clean kitchen towel. The arugula should be completely dry so the dressing adheres properly.
