Notes

You can also use fresh spinach instead of frozen (however, you'll need about 700-800g, as it will wilt down significantly – sauté it first with some red onion & garlic and squeeze out any remaining water). Replace cottage cheese with ricotta or feta, if you like. Add sautéed mushrooms, diced tomatoes, or caramelized onions for extra flavor. Use any hard cheese you like instead of Parmesan – Pecorino, aged Cheddar, or Gruyère all work great. Macros are provided for reference (of course, the accuracy of these can vary due to adaptations of the ingredients or slightly different amounts/portion sizes), but at THV we don't obsess over numbers — No stress.
