Turn cooking mode on
Step 1
In a large mixing bowl, whisk together the oat flour, yogurt, sweetener and some milk. Mix until smooth. Tip: to avoid clumps, sift in the oat flour. Adjust flour or milk to reach the desired batter consistency, as well as the amount of sweetener to your taste.
Step 2
Wash and slice the strawberries. Use the biggest slices for the mini pancakes and save the smaller ones for toppings (or snack on them while cooking ;). Dip each slice into the batter until fully coated. If the dough doesn’t stick well, see next step!

Step 3
Heat a little (coconut) oil in a non-stick pan. Add a drop of batter, then place a strawberry slice on top and cover it with another drop of batter. Repeat for all slices.

Step 4
You can add a few chocolate chips on top before frying, if you like. Cook on medium heat for about 2–3 minutes per side until lightly golden.

Step 5
Serve with your favorite toppings—like yogurt, maple syrup, or fresh fruit—and enjoy ;)!
