Step 1
Halve the papaya and scoop out the seeds with a spoon. Set a small spoonful aside if you'd like to use them as garnish; they have a peppery bite and incredible health benefits (however, they should be avoided during pregnancy and not be consumed in access; about 1 teaspoon a day is recommended). Scoop the flesh away from the skin and cut into rough chunks directly into the blender.

Adaptations:
The riper the papaya, the better this tastes — look for skin that's turning yellow-orange and gives slightly under gentle pressure. An underripe papaya will taste starchy and flat; a squeeze of citrus helps but won't fully compensate.
Mango makes a natural swap if papaya isn't available, or combine the two for a more complex flavour.
Coconut water in place of still water adds a subtle tropical note without overpowering.
For a thicker, more dessert-like consistency, use full-fat Greek yogurt and skip the water entirely.
Storage:
You can store the lassi in the fridge for a day or two, however it is usually best consumed immediately or within the following 24 hours ;)!
