Fruity Summer Salad with Mixed Nuts

This is what we call eating the rainbow – vibrant greens, jewel-toned berries, creamy avocado, and omega-3-rich smoked salmon, all brought together with a mix of premium nuts from NutNut. Turn cooking mode on

Step 1

Rinse the lamb's lettuce thoroughly under cold water (it can be sandy). Gently spin dry in a salad spinner or pat dry with a clean kitchen towel. The leaves should be completely dry so the dressing adheres properly. Place in a large salad bowl.

2 handfuls Lamb's lettuce

Step 2

Wash the cucumber and slice it into thin rounds, half-moons, or dice it into cubes – whatever you prefer. If your cucumber has large seeds and is very watery, you can halve it lengthwise and scoop out the seeds with a spoon before slicing (but that's not necessary)!

Cut the avocado in half, remove the pit, and slice or cube one half thinly. Optionally, squeeze a bit of lemon or lime juice over the avocado to prevent browning.

Wash the strawberries gently, pat dry, remove the green tops, and cut into halves or quarters depending on size. Rinse blueberries gently and pat dry.

Tear or cut the smoked salmon into bite-sized pieces.

In a small bowl or jar with a lid, combine the olive oil, balsamic vinegar, Dijon mustard, honey (if using), and minced garlic (if desired). Whisk vigorously with a fork or shake the jar until the dressing is completely emulsified and creamy. Taste and season with sea salt and freshly cracked black pepper. The dressing should be tangy, slightly sweet, and well-balanced. Adjust to your preference – more vinegar for tanginess, more honey for sweetness, more mustard for a spicy kick.

1/2 tbsp Balsamic vinegar

1/2 tsp Dijon mustard

1/2 tsp Honey

1 small Garlic clove

Add everything to the bowl with the lamb's lettuce. Toss everything gently to distribute evenly.

Step 8

Drizzle the vinaigrette over the entire salad. Add an extra crack of black pepper over the top. If you have fresh mint or basil leaves, tear them and scatter over the salad for extra freshness and aroma.
