Notes

Storage: The undressed salad keeps well in an airtight container in the refrigerator for 3-4 days, making it perfect for meal prep. Store the dressing separately in a small jar. The vegetables stay surprisingly crisp! Once dressed, the salad is best eaten within 24 hours, though the cabbage will soften slightly.

Serving Suggestions:

  • Serve as a side dish with grilled chicken, pan-seared salmon, or steak

  • Add grilled tofu, tempeh, or edamame to make it a complete meal

  • Pair with a warm soup for a satisfying lunch

  • Use as a filling for wraps or spring rolls

  • Serve alongside Asian-inspired dishes or grain bowls

  • Top with a soft-boiled egg or crispy fried egg for extra protein
