Adaptations:
Sweet potato can replace regular potato for the smashed component; reduce the parboil time slightly as sweet potatoes cook faster.
If you want to add protein, a soft-boiled egg, roasted chickpeas, salmon, chicken, a few slices of halloumi, or a portion of white beans are a great addition.
The zucchini and mushroom pan is also delicious stirred through pasta if you have leftovers.
Storage:
Each component stores separately in the fridge for up to 3 days.
The beetroot and potato reheat well in the oven at 180°C (350°F) for 5-10 minutes.
The zucchini pan is best reheated in a pan rather than the microwave to keep some texture.
Assemble fresh each time — the salad leaves don't hold once dressed.
