Refreshing Celery Juice

I try to drink this first thing in the morning before anything else — especially, during the warmer seasons it's become one of those non-negotiable morning habits that took about few weeks to feel normal and now feels strange to skip. You don't need a juicer to make it (for the longest time I didn't have one and always made it in the blender ;)...once you find your rhythm with batch-making, it stops feeling like effort.

Notes

How and when to drink it:

First thing in the morning on an empty stomach is the approach most people find works best — it's a gentle way to hydrate after sleeping and gives the juice a clear window before food arrives. Wait 15–20 minutes before eating breakfast. If 500ml feels like too much to start with, begin with 250ml and increase gradually as your body adjusts. Some days you'll manage it five mornings a week, others two. Consistency over time matters more than perfection on any given week.


Other ways to use celery:

  • Beyond juicing, celery works well blended into a green smoothie with spinach, apple, and banana — the flavour disappears almost completely behind the fruit.

  • Raw stalks with almond butter or hummus are also a genuinely satisfying snack, and taste better than it sounds right now...trust me ;).

  • Chopped into salads it adds crunch and some freshness.

  • Added to soups or stews at the start alongside onion and garlic — the heat reduces some of the raw nutrients, but the same is true of almost every vegetable and it's still worth including.

  • For a simple infused water, add celery stalks, cucumber slices, and lemon to a pitcher of cold water and leave in the fridge for a few hours.

Storage: Refrigerate in a sealed glass jar for up to 2–3 days. The juice will separate as it sits; shake or stir before drinking. For longer storage, freeze in individual portions and defrost in the fridge for 1–2 hours before drinking. Avoid leaving it at room temperature for extended periods as fresh juice oxidises quickly.
