Notes

Adaptations:

This platter is infinitely adaptable to whatever is in your fridge or in season.

  • The tuna can be swapped for a few slices of smoked salmon, tofu, a soft-boiled egg, or a small bowl of hummus if you'd prefer a different protein.

  • If chickpeas aren't your thing, edamame, white beans, or roasted pumpkin seeds are all excellent alternatives.

  • The heirloom tomato can be any large ripe tomato — buffalo tomatoes or beefsteak varieties work just as well.

  • The hard cheese can be entirely omitted for a fully plant-based version, or swapped for a slice of vegan cheese or a few cashews for healthy fats.

  • For a more filling platter, add a small bowl of guacamole, tzatziki, or almond butter as a dip for the vegetables.

Storage:

  • Almost everything here can be prepped the night before and stored in separate containers in the fridge — assemble the platter easily and it's ready in under 3 minutes.

Macros are provided for reference (of course, the accuracy of these can vary due to adaptations of the ingredients or slightly different amounts/portion sizes), but at THV we don't obsess over numbers — No stress. No guilt. Just nourishment❤︎!
